You’re not missing a setting here — what you’re seeing is actually a current limitation of the Multi-Property Booking Engine (MPE / MP distributor).
What’s happening
In the multi-property booking engine, the first step only allows guests to select the number of persons, not detailed age categories.
This is by design, because age categories aren’t standardized across properties (even if, in your case, they’re configured the same way).
How age categories work in MPE
Guests can select detailed ages only after:

Choosing a specific property, and
-
Moving to the space / room selection step
At that point, your configured age categories (Adult, Child, etc.) appear and are applied correctly for that property.
Important to know

There’s no configuration switch (neither in Mews nor on the external provider’s side) that enables multiple age categories on the first MPE step.

This is a product limitation, not a setup issue.
