Does someone know if it’s possible to create a email from zero ?
For example : create a new email to remind the guest to book a table at the restaurant the morning before they arrived.

you can´t at the moment as the email editor is very limited by now.
You might at that on one of the existing emails.

It is not possible to create a new category for mail templates. However, we achieved a similar result by adding the content to the pre-arrival email (online check-in).
In our case, we wanted guests to be aware of the option to book valet parking or an airport transfer in advance, so we included these as articles in the online check-in email. You can also add custom links there, for example if you use a third-party booking engine for restaurant reservations. These links can only be static, not dynamic, unfortunately.
