I think you need the reservation report for that. You can filter it as you want (segmentation, rates, all bookings). Important is to select Mode - Detailed.
If you download it into an excel you will be able to see the creation date and the arrival date. With excel you can add the formule = arrival date - creation date (by just selecting the cell) and you will get the amount of days between booking and arrival date.

@Robin Lindaart in MEWS the only method you could use as @Milou is providing.. however thats a lot of manual work. You will want to connect an RMS to MEWS that can provide you with such insights i'm afraid.
