The behaviour you describe is called “trim” and most programming languages do have a function just for that. Many systems do a “trim” as part of their input sanitation so yeah i think Mews should do this too.

Probably not only for first and lastname but this could be considered for some other fields too. Also double white spaces would be a thing to remove probably.

I agree with @jones.eth - trimming or other field validation controls would be good, also on fields like tax identifier.
