So, this should be fairly straightforward however does not seem to be playing ball with me and its now becoming quite annoying.
What I need to set is a 2-night minimum length of stay for a Saturday, that effectively ‘lifts’ on Thursday to allow one night stays.
It is currently set as this:
which according to help articles etc says that this will apply a minimum 2 night restriction if the guest is booking more than 3 days in advance, but not apply restriction if less than 3 days in advance? Am I misunderstanding? as all that happens with this is it stops anyone booking any stay that is includes a Saturday no matter how long in advance they book and closes channel managers for Saturdays entirely.
If i switch this round and do Minimum 3 days advance then it works as MLOS for Saturdays on channel managers but then doesnt allow saturdays to book one night on the day?

**Close the Stay for all Saturdays, except if the reservation is booked Max 3 Days in Advance and the length of the Booking is 2 Nights minimum.

Here is how I interpret this (please correct me if I did not fully capture your needs):
You often need to apply multiple restrictions in some cases.
Restrictions: Calendar ViewList View

So, we have a minimum 2 night stay every Saturday of the year. What we want to do is set it so that this only applies until the Thursday before the relevant Saturday.
For example, Saturday 10th is 2 night minimum for all stays. However when we reach Thursday 8th, a person can then book a 1 night stay for Saturday 10th (or on the Friday 9th or Saturday 10th).
So open for one night stays Sunday to Friday, and 2 night minimum for a Saturday until we reach Thursday at which point a 1 night stay for Saturday becomes possible to book. The above seems to restrict for all days.

Based on my understanding, what you are needing is:
Sun-Fri - enable guests to book 1 night stays
Saturday - only allow 2 night stays unless the guest is making the booking on the Thurs or Fri right before the upcoming Saturday
I’ve tested the configuration in Mews, and unfortunately, the exact setup you’re looking for is not possible due to how restrictions function in the system. Below, I’ll explain why and offer potential alternatives.
While Mews allows setting Closed-to-Stay (and Arrival & Departure), MinLOS, and Advance Booking Restrictions, it does not support a dynamic override based on the booking date. This means:
The MinLOS restriction for Saturday applies uniformly, regardless of when the booking is made.
While the advance booking rule allowed a 1-night booking on a given Saturday when made on Thursday, it prevented standard 2-night bookings made in advance, which is not the intended outcome.
Restriction exceptions in Mews can override rules for specific dates but do not work dynamically based on booking lead time (i.e., there is no way to specify "only allow 1-night stays if booked on the preceding Thursday or Friday").
While your exact request cannot be currently implemented, here are a few possible workarounds:
Manually Adjusting the Saturday Restriction Weekly
You could manually remove the 2-night MinLOS restriction on Saturdays every Thursday or Friday to allow 1-night stays.
This requires active management but ensures flexibility
Using Different Rate Groups
Create a separate rate for last-minute bookings, allowing 1-night Saturday stays only on Thursdays and Fridays.
Keep the existing MinLOS and Adv. Booking restriction you had set up originally for Saturdays
Encouraging 2-Night Stays with Pricing Strategies
Instead of enforcing a restriction, you could adjust pricing so that 1-night Saturday stays are more expensive, nudging guests toward booking longer stays.
